Trained as a concert pianist from childhood, he studied at the Julliard School before shifting his creative energies to cooking. In 1989, he earned a Grand Diploma from the French Culinary Institute in New York and refined his skills at the Union Square Café, Remi and Chanterelle in New York.  He then apprenticed at the two-star Michelin restaurant, Moulin de la Gorce near Limoges, France.

By opening Paley’s Place in 1995, a restaurant with only 50 seats, Vitaly and his wife Kimberly have made a commitment to creativity and flexibility in cuisine, sophistication in service, and intimacy in the dining experience. Chef Paley has received numerous enthusiastic accolades, including the coveted James Beard Award for Best Chef Northwest in 2005.

The restaurant is continually featured in magazines and newspapers across the country – from the New York Times and Oprah Magazine to Gourmet, Bon Appetit and Sunset. Vitaly has appeared on television broadcasts like the Martha Stewart Show, Oprah, OPB’s Endless Feast, and Chefs A’Field, further showcasing his commitment to sustainable, seasonal Pacific NW cuisine.

Chef Mark Kiffin is just one of 18 world-class chefs who will descend on the sleepy but beautiful town of Bend, Oregon in July for the Deschutes Brewery Sagebrush Classic. The Sagebrush Classic, which typically sells out, is a favorite among the star chef crowd, many who return summer after summer.

The 2009 all-star lineup includes Iron Chef veterans José Andrés and Roberto Donna, Bon Appetit rock stars Michael Smith and Greg and Mary Sonnier, and Food Network favorite Jen Jasinski (Rioja, Denver).

Count them among a group of talented chefs from Italian, Spanish, French, Thai, Vietnamese, Hawaiian and New American culinary backgrounds, just to name a few.

Many of the restaurants represented by these chefs have months-long waiting lists for reservations — 1,000 guests will get to sample this variety of gourmet cuisine and meet the chefs in person all in one place — the gorgeous green meadow surrounded by snow-capped mountains at Broken Top Club. How lucky is that?

Local Media Get Sneak Preview & History Lesson On The Deschutes Brewery Sagebrush Classic

Bend, Oregon media got a taste of the Sagebrush Classic yesterday when three Sagebrush chefs prepared dishes for an event at the Deschutes Children’s Foundation.

Gavin McMichael from The Blacksmith prepared a cured beef carpaccio on rye crostini with white bean hummus and picallily vegetable.

Matt Neltner from Deschutes Brewery prepared a Charcuterie board with Rosemary Bread, Black Butte Porter Bread and Roasted Vegetable Platter.

Mike Mackie from Broken Top Club prepared a cheese board with dried fruits, nuts and crackers.

And of course, those dishes were carefully paired with flavorful, award-winning beers from Deschutes Brewery.

Gary Fish, who founded both the event and the Brewery, gave a quick history lesson on the soon-to-be 21st Deschutes Brewery Sagebrush Classic. The Sagebrush Classic began as a golf tournament and back-alley BBQ for Deschutes Brewery’s customers, employees and vendors. In 1994, it expanded to include a gourmet dinner prepared by top chefs from across the country. Today the Sagebrush Classic Feast draws more than one thousand people to the Broken Top Meadow for the hottest night of the year.

Given its informal beginnings, it’s incredible that today the Deschutes Brewery Sagebrush Classic Feast showcases the culinary artistry of national and international star chefs, and has evolved into a must-attend event for chefs and party-goers alike.  In total, the Sagebrush Classic has generated more than $2 million for Deschutes Children’s Foundation, which each year serves more than 45,000 local children and families.
